COLD GREEN PEANUT SOUP

INGREDIENTS:

  • 100ml/ 0.4 cups raw peanuts
  • 500ml/ 2 cups water
  • 1 cup broccoli, fresh or frozen
  • 1 cup spinach, fresh or frozen
  • a handful of leek, sliced
  • 1 garlic clove, chopped
  • 1 tsp ginger, grated
  • a handful of basil
  • juice 1/8 lemon
  • black and white pepper
  • salt

INSTRUCTIONS:

  1. Start by blending the peanuts to a fine powder ( a few chuncks left doesn’t matter though)
  2. Add water and blend again
  3. Garnish with whatever toppings you like, such as fresh herbs nuts or seeds like hemp or pumpkin, or raw sauerkraut.
